Spring Cleaning: Recipe Edition.

Let me begin by saying sinus infections are no fun! I can’t seem to shake this one. Putting my body in overdrive Ore-fashion show for a few weeks must have caught up with me because in just two short days following it I came down with this and have been stuck with it since! Thank God for the Hills marathon on TV this weekend- it gives me at least something to do since I’m stuck on my couch feeling like an invalid.

Don’t worry, I haven’t forgotten about those promised recipes. And of course, there’s always time to peruse the internet’s vast recipe collection..instead of studying for my numerous tests? Check.

Strawberries. Oh they are so yummyyy! I just love slicing them up and having them for a snack. But here’s one recipe I absolutely love!
Spinach-Strawberry Salad:
Honey-Dijon Dressing
1 small jicama
2 kiwis
1 cup strawberries
8 cups spinach
Dressing:
2 tbsp vegetable oil
2 tbsp honey
2 tbsp orange juice
1 tbsp white vinegar
1 tsp poppy seed
2 tsp Dijon mustard
Cut up jicama, kiwi and strawberries. Toss in spinach leaves (remove stems if desired!) and pour dressing over. Serve immediately so salad is crisp.
This makes 4 servings. One serving is just 165 calories for all you calorie counters out there 🙂

As for Asparagus.. I just love it on the grill! Coat with some olive oil and spices you love and grill ’til its semi-tender. Its great with balsamic vinegar too!
