Pumpkin Spice Latte

It’s been awhile since I’ve done a weekend treats post – mostly because my weekends were so tied up working! But during this fall + winter season, I plan on bringing it back for little goodies to enjoy.
Last weekend, my sisters came over and we spent the afternoon together. On our agenda was to make homemade pumpkin spice lattes. Since I eat dairy free, I can’t enjoy any latte’s (or the quintessential Starbucks PSL) without paying for it in severe stomach pains afterwards – not fun. I searched the web for a few different recipes and came up with a recipe based on a few others.
1 can light coconut milk (you can use full fat, but this makes a “skinny” latte!)
1 cup freshly brewed coffee
1 tbsp. pumpkin pie spice (Trader Joe’s) OR 1 tsp. cinnamon, nutmeg, ginger/cloves
2 tbsp. organic pumpkin (I get mine at Trader Joe’s)
1 tbsp. honey
1 tsp. vanilla extract
  • Mix the coconut milk, coffee, vanilla, and honey together in a saucepan – bring to a boil.
  • Reduce to simmer and let simmer for a few minutes, mixture should start to foam.
  • Add in your spices + pumpkin, mix thoroughly.

To get the ‘frothy-ness’ of a typical latte you can put it in the blender (be careful!). I just poured it straight into a glass when it started to foam from the pan. Sprinkle the top with a little spice + enjoy!
