Happy Superbowl Sunday everyone!

Wanted to pop in and give you all a quick Whole 30 recipe: egg salad. This was one of my go to’s the entire month – it was quick and easy for lunch when I had a packed day or just didn’t want to whip up something more complex. In case you missed it, I shared my entire Whole 30 Shopping List last week, and gave tips on each of the food groups. This recipe would be one of the ones that I would prep ahead of time.. i.e. hard boil a dozen eggs at the beginning of the week to have for the entire week.

Now, total disclaimer here. This mayo is technically NOT Whole 30 approved because it lists ‘sugar’ in the ingredients. However, when looking at the serving size/nutrition facts, there’s 0g of sugar listed. For me, sugar isn’t an issue – I don’t have a sweet tooth at all. And since this had 0g in one serving (which I don’t even think I would use an entire serving in this recipe), I was comfortable buying this. When it came down to it, I was eating like a tablespoon of this mayo maybe twice a week? Really, not going to throw off my program.

However, if you do have a sweet tooth, I would strongly suggest straying away from this and looking up recipes to make your own Whole 30 mayo. I personally don’t like mayo so for me it wasn’t really worth it to make a whole batch when I barely used any.

Now that that’s clarified.. let’s get to the recipe!

INGREDIENTS

4 hard boiled eggs
chopped red onion (to taste)
chopped green onion (to taste)
1-2 tbsp. of #Whole30 approved mayo
1 tsp. Dijon Mustard (Nature’s Promise is approved)

DIRECTIONS

Slice eggs into bite size pieces. Add in your onions to your personal preference/taste. You can also add other veggies like celery – I’m not a fan personally! Add in your mayo + mustard. Mustard gives the egg salad an extra little zing, which I personally love in almost any food. Combine mixture – and guess what? You’re done!

This egg salad tastes SO fresh. I usually ate it with a side of my Asian Detox salad – which I’ll be sharing this week, so stay tuned!
